Mangos are delicious and I am all about grafting more of these wonderful fruit trees! Mango budwood is very distinct once you know what you are looking for. You can use both the terminal (end) bud or the lateral (side) buds.
Good Budwood - Many different lateral buds that are swelling (like a pimple). These buds can be found almost any time of year.
Good Winter/Flowering Budwood - Look for side buds around the terminal bud. The terminal bud is usually going to be a flower. Make sure the leaves are hardened off around the bud.
Questionable Budwood - The terminal bud is too far pushed, but the side buds look good.
Bad Budwood - Buds that have pushed young new leaves.
