Avocado Recipes

Here at ECHO North America RIC, we are preparing rootstock for grafting avocados, which means we need a lot of avocado pits. How do we get enough seeds? 1,000 lbs of Lula avocados that’s how!

None of us want to eat that much guacamole so give us some recipes to help us make use of them!

I’ll start us off with some avocado pancakes I made for my family on Sunday. They turn a fun green shade! I recommend cooking them slow as they take a little longer to cook through and be prepared for the insides to stay a little more moist than regular pancakes. They run a bit more savory kind of like a fritter unless you add something sweet. This made about 20 pancakes:

1 1/3 cups of avocado meat
6 Eggs
3 tsp lemon juice
1 Very ripe banana
3 cups of oats
3/4 tsp baking powder
3/4 tsp baking soda
Dash of salt
Dash of vanilla (optional)
Blend in a blender and cook as you would normal pancakes (Just a little lower heat)

Often I don’t have an immediate use for all the avocados, but I do appreciate that avocado does freeze well for up to 6-9 months as long as it is in an airtight, sealed bag.

Chocolate Avocado Smoothie

This one is a delicious treat and healthy! Fills about 6 small glass.

2 Avocados (I’d probably use more next time to make it creamier)
3 Cups of Oat milk (I’d use less next time)
6 Tbsp Coco powder
6 heaping Tbsp of natural peanut butter
Dash of Vanilla
3 Cups of Ice (more if you want it more slushy, this just made it nice and cold)
20 Pitted Dates (didn’t blend well, next time I’d use banana)
Dash of salt
