One of my favorite foods to eat here in the Philippines is cassava leaves or banana heart cooked in coconut milk.
Either one served over rice make a nutritious healthy meal.
There is no reason someone has to buy meat or fish because meals like these are delicious. 
The Philippines has many poor people who only want meat with their rice. 
Sadly, few know of these dishes which can be made from items that many can get for free.
They only have to buy their rice.
We use the tender green leaves of the cassava or shred the banana heart

I remember Filipinos going to harvest banana heart when I was a teenage in Hong Kong, last year for the first time, I tried it. I watched YouTube videos and … What I understand is you need to take off the red darker leaves and cut it up small and soak it in salt water for 15 mins or so and then squeeze out the milky stuff and then rinse it a few times and you cook with it… I made it and we liked it - I think it’s a bit like cabbage. Many people in the Sahel don’t know you can eat it which is a big waste as there is so much hunger. Bananas are not a big crop here but at least those that grow them should know and enjoy it!
Could you please correct any of my misunderstanding about how to cook it… or have I understood correctly? I wonder if I am throwing away too much of the little flowers and outer leaves…
They also grow Cassava here but I know of nobody who eats the leaves. You have to boil them and throw the water away 3 times or something yeah?
Please tell me more about how to cook these things and if you have a simple recipe or two please share them with me!

Yes, I think of it like cabbage.
My wife usually makes it into patties which she fries in coconut oil. She adds some sardines or salmon with an egg to hold the flour, bread crumbs, oats etc together.
My favorite is with coconut milk though.
My wife cooks the tender cassava leaves for 20 minutes and throws out the water once.
Cut it up into small pieces and add vinegar and spices.
Add some moringa leaves for more protein as you are sauteing the onions
We like to have it with coconut milk.
Of course almoat everything here is with rice!
