What type of melon do you have? Here at the ECHO Global Seed Bank, we have tried fermentation processes with some melons (e.g. winter melons/wax gourd) but not with others!

A recent ECHO intern who spent time in Senegal, @Grace_Brinsfield, said that the seed manager there fermented cucumber inside the fruit. Grace, could you share a bit more?

Sir, are you referring to the cracking of egusi melon for cooking? A very labor intensive process indeed. Iā€™m interested to hear if anyone has novel ideas.

He cut hashes in the side of the cucumbers and let them sit for a few days. The gel that covers the seeds was fermented so when cut open the seeds separated easily from the pulp.
