Training on producing Ham & Other Charcuterie products

Good day all. I currently work with some rural pig farmers back in Nigeria and I have been trying to learn how to make Hams and other pork derivatives without expensive machines or equipments in order to assist them in expanding their product base as well as enabling to tap into unutilized markets.

I would be glad to learn from anyone who has the technical expertise here.

I would be grateful for any help I can get here.
